Keto Golubtsi (Cabbage Rolls) with Coconut Aminos

Traditional Russian cabbage rolls made keto-friendly with cauliflower rice and flavored with coconut aminos instead of soy sauce.

Ingredients

  • 1 lb Ground beef
  • 2 cups Cauliflower rice
  • 8 large Cabbage leaves
  • 1 medium Onion, chopped
  • 1/4 cup Tomato paste
  • 2 tbsp Coconut aminos
  • 1 cup Beef broth
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions

  1. 1Place the 8 large cabbage leaves in a steamer basket over boiling water. Steam for 5-10 minutes, or until the leaves are pliable and easy to unroll. Remove the leaves from the steamer and let them cool slightly until they are safe to handle.
  2. 2In a large bowl, combine the 1 lb ground beef, 2 cups cauliflower rice, 1 medium chopped onion, 1/4 cup tomato paste, 2 tbsp coconut aminos, 2 cloves minced garlic, and to taste salt and pepper. Mix everything together thoroughly with your hands or a spoon until well combined.
  3. 3Lay one softened cabbage leaf flat. Place about 1/4 cup of the meat mixture near the stem end of the leaf. Fold the sides of the cabbage leaf inward over the filling, then roll it up tightly from the stem end towards the tip. Repeat this process with the remaining cabbage leaves and meat mixture to create all the rolls.
  4. 4Heat 1 tbsp olive oil in a large pot or Dutch oven over medium-high heat (350°F / 175°C). Carefully place the cabbage rolls into the hot pot, seam-side down, in a single layer if possible. Cook for 2-3 minutes until the seams are sealed and lightly browned.
  5. 5Pour the 1 cup beef broth over the cabbage rolls in the pot. Bring the liquid to a gentle simmer over medium heat (300°F / 150°C). Once simmering, reduce the heat to low, cover the pot tightly, and cook for 45-60 minutes. The cabbage rolls are done when the cabbage is tender when pierced with a fork and the internal temperature of the beef reaches 160°F (71°C).
  6. 6Carefully remove the cabbage rolls from the pot. Serve hot.

Coconut aminos provide a similar savory flavor to soy sauce but are gluten-free and keto-friendly. Tamari can also be used.
