Ingredients

  • 1 large Head of cabbage
  • about 450 g Ground beef
  • 2 cups Cauliflower rice
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • about 170 g Tomato paste
  • 1 cup Beef broth
  • 2 tbsp Avocado oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Core the 1 large head of cabbage by cutting around the stem with a sharp knife. In a large pot, bring enough water to a rolling boil to submerge the cabbage. Carefully place the cored cabbage into the boiling water and cook for 10-15 minutes, or until the outer leaves are tender enough to easily bend without tearing; gently peel off approximately 8-10 pliable leaves as they become ready.
  2. 2In a large bowl, combine the about 450 g of ground beef, 2 cups of cauliflower rice, the 1 medium finely chopped onion, the 2 cloves of minced garlic, 1 tsp of salt, 1/2 tsp of black pepper, and 2 tbsp of avocado oil. Mix these ingredients thoroughly with your hands until they are well combined.
  3. 3Lay one prepared cabbage leaf flat on a clean surface with the stem end facing you. Place a scoop (about 1/4 cup) of the meat mixture near the stem end of the leaf, then fold the sides of the leaf over the filling. Roll the leaf up tightly from the stem end to form a compact roll, ensuring the filling is enclosed.
  4. 4Repeat the rolling process with the remaining cabbage leaves and meat mixture until all the filling is used. Preheat your oven to 175°C. In a 22.86 × 33.02 cm baking dish, spread the about 170 g of tomato paste evenly over the entire bottom surface.
  5. 5Arrange the prepared cabbage rolls seam-side down in a single layer in the baking dish. Pour the 1 cup of beef broth evenly over the cabbage rolls. Cover the baking dish tightly with aluminum foil.
  6. 6Bake for 60-75 minutes, or until the cabbage is very tender and the internal temperature of the meat reaches 71°C when measured with a meat thermometer. The meat should also show no pink in the center when a roll is cut open. Carefully remove the dish from the oven and let it rest for 5 minutes before serving.
