Ingredients

  • 1 lb Ground pork
  • 4 cups Cauliflower rice
  • 8 large Cabbage leaves
  • 1 medium Onion
  • 6 oz Tomato paste
  • 2 cups Beef broth
  • 1/2 cup Dairy-free sour cream alternative
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Bring a large pot of water to a boil. Carefully add the 8 large cabbage leaves to the boiling water and cook for 2 to 3 minutes, or until they are pliable. Remove the leaves from the water and let them cool slightly so they are easier to handle.
  2. 2In a large bowl, combine the 1 lb ground pork, 4 cups cauliflower rice, 1 medium onion (chopped), 2 cloves garlic (minced), 1 tsp paprika, 1 tsp salt, and 1/2 tsp black pepper. Mix everything together thoroughly with your hands or a spoon until well combined.
  3. 3Lay one blanched cabbage leaf flat. Place about 1/4 cup of the meat mixture near the stem end of the leaf. Fold the sides of the cabbage leaf inward over the filling, then tightly roll the leaf up from the stem end towards the tip. Repeat this process with the remaining cabbage leaves and meat mixture.
  4. 4Place a 6-quart or larger heavy-bottomed pot or Dutch oven on the stove. Add the 2 tbsp olive oil and heat over medium heat (350°F / 175°C) until shimmering.
  5. 5Carefully place the rolled cabbage rolls into the hot pot, seam-side down, in a single layer if possible. Cook for 2-3 minutes until the seams are sealed.
  6. 6Pour the 6 oz tomato paste and 2 cups beef broth over the cabbage rolls in the pot. Bring the liquid to a gentle simmer over medium heat (200°F / 93°C). Once simmering, reduce the heat to low (250°F / 121°C), cover the pot tightly, and cook for 1 hour and 30 minutes, or until the cabbage is very tender and the pork is cooked through (internal temperature of 160°F / 71°C).
  7. 7During the last 15 minutes of cooking, stir in the 1/2 cup dairy-free sour cream alternative into the sauce in the pot. Stir gently to combine.
  8. 8Serve the Keto Golabki hot, spooning some of the sauce from the pot over each roll.
