Keto Golabki (Cabbage Rolls) with Cauliflower Rice

A keto-friendly version of Polish cabbage rolls filled with ground meat and cauliflower rice, simmered in a tomato-based sauce.

Ingredients

  • 1 large Green cabbage
  • 1 lb Ground beef
  • 2 cups Cauliflower rice
  • 1 medium Onion
  • 2 cloves Garlic
  • 24 oz Tomato sauce
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1 tsp Marjoram
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Remove the core of the cabbage and place the whole head in a large pot of boiling water. Cook for 5-7 minutes, or until the outer leaves are pliable enough to peel off. Carefully remove the leaves one at a time and set aside to cool.
  3. 3In a large bowl, combine ground beef, cauliflower rice, diced onion, minced garlic, paprika, marjoram, salt, and pepper. Mix well.
  4. 4Place a spoonful of the meat mixture onto each cabbage leaf. Fold in the sides and roll up tightly.
  5. 5In a large baking dish, spread a thin layer of tomato sauce. Arrange the cabbage rolls seam-side down in the dish.
  6. 6Pour the remaining tomato sauce over the cabbage rolls. Drizzle with olive oil.
  7. 7Cover the dish with foil and bake for 60 minutes, or until the cabbage is tender and the meat is cooked through.
