Keto Golabki (Cabbage Rolls) with Cauliflower Rice

A keto-friendly version of traditional Polish cabbage rolls, using cauliflower rice instead of regular rice.

Ingredients

  • 1 Head of Cabbage
  • 1 lb Ground Pork
  • 2 cups Cauliflower Rice
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 large Egg
  • 6 oz Tomato Paste
  • 2 cups Beef Broth
  • 1 tsp Dried Marjoram
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Carefully remove the tough core from the 1 Head of Cabbage. Place the cored cabbage in a large pot and cover with water. Bring the water to a boil over high heat and cook for 5-8 minutes, or until the outer leaves are soft enough to peel away. Carefully remove the cabbage from the pot and let it cool slightly. Gently peel off 8-12 of the largest outer leaves, being careful not to tear them.
  2. 2While the cabbage cools, prepare the filling. In a large bowl, combine the 1 lb Ground Pork, 2 cups Cauliflower Rice, 1 medium Onion (diced), 2 cloves Garlic (minced), 1 large Egg, 1/2 tsp Salt, 1/4 tsp Black Pepper, and 1 tsp Dried Marjoram. Mix everything together thoroughly with your hands or a spoon until well combined.
  3. 3Lay a prepared cabbage leaf flat. Place about 1/4 cup of the meat mixture near the stem end of the leaf. Fold the sides of the cabbage leaf inward over the filling, then roll it up tightly from the stem end towards the tip.
  4. 4Repeat step 3 with the remaining cabbage leaves and meat mixture until you have 8-12 cabbage rolls.
  5. 5Spread a thin layer of 2 oz of the 6 oz Tomato Paste evenly across the bottom of a large, heavy-bottomed pot or Dutch oven (at least 5-quart capacity). Arrange the cabbage rolls seam-side down in a single layer on top of the tomato paste.
  6. 6Pour the 2 cups Beef Broth over the cabbage rolls. Spread the remaining 4 oz of Tomato Paste evenly over the top of the cabbage rolls and the liquid.
  7. 7Place the pot over high heat and bring the liquid to a gentle simmer. Once simmering, reduce the heat to low, cover the pot tightly with a lid, and cook for 60 minutes. The cabbage rolls are done when the cabbage leaves are very tender and the internal temperature of the pork reaches 160°F (71°C).
  8. 8Carefully remove the cabbage rolls from the pot and serve hot.
