Keto German Meatballs (Königsberger Klopse)

Ingredients

  • 1 lb Ground Pork
  • 1/2 lb Ground Beef
  • 1/4 cup Almond Flour
  • 1/2 medium Onion
  • 1 Egg
  • 1 tbsp Coconut Aminos
  • 1/2 tsp Salt
  • 1/4 tsp White Pepper
  • 4 cups Beef Broth
  • 1/2 cup Heavy Cream
  • 2 tbsp Lemon Juice
  • 2 tbsp Capers
  • 2 tbsp Butter

Instructions

  1. 1In a large bowl, combine the 1 lb ground pork, 1/2 lb ground beef, 1/4 cup almond flour, 1/2 medium onion (finely chopped), 1 egg, 1 tbsp coconut aminos, 1/2 tsp salt, and 1/4 tsp white pepper. Mix everything together with your hands until just combined, being careful not to overmix.
  2. 2Shape the meat mixture into small meatballs, about 1 to 1.5 inches in diameter. You should have about 16-20 meatballs.
  3. 3Pour the 4 cups of beef broth into a large, heavy-bottomed pot and bring it to a gentle simmer over medium-high heat (400°F / 200°C).
  4. 4Carefully add the meatballs to the simmering 4 cups of beef broth. Cook for 15-20 minutes, or until the meatballs are cooked through and float to the surface. The internal temperature should reach 160°F (71°C).
  5. 5Using a slotted spoon, gently remove the cooked meatballs from the broth and set them aside on a plate. Keep the broth in the pot.
  6. 6In a separate medium saucepan, melt the 2 tbsp butter over medium heat (350°F / 175°C). Once melted, whisk in the 1/2 cup heavy cream and 2 tbsp lemon juice. Continue whisking until the sauce is smooth and begins to gently simmer.
  7. 7Stir the 2 tbsp capers into the simmering cream sauce. Let it cook for 1-2 minutes, allowing the flavors to meld.
  8. 8Gently return the cooked meatballs to the saucepan with the sauce. Simmer for another 3-5 minutes, stirring occasionally, until the meatballs are heated through. Serve hot.
