Keto-Friendly Chicken Mafe with Cauliflower Rice

Ingredients

  • 1.5 lbs Chicken thighs
  • 1 large head Cauliflower
  • 6 oz Tomato paste
  • 2 cups Chicken broth
  • 2 tablespoons Coconut aminos
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1/4 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Cut the 1.5 lbs chicken thighs into 1-inch pieces. Peel and finely mince the 3 cloves garlic and 1 inch ginger. Peel and finely chop the 1 medium onion.
  2. 2Place a large heavy-bottomed pot or Dutch oven over medium heat (350°F / 175°C). Add the 2 tablespoons of olive oil. Once the oil is shimmering, add the 1.5 lbs of chicken pieces and cook for 5-7 minutes, turning occasionally, until browned on all sides.
  3. 3Add the chopped onion, minced garlic, and minced ginger to the pot with the chicken. Cook for 3-5 minutes, stirring frequently, until the onion is softened and translucent.
  4. 4Stir in the 6 oz of tomato paste until it coats the chicken and vegetables. Cook for 1 minute, stirring constantly, until it darkens slightly. Add the 2 cups of chicken broth, 2 tablespoons of coconut aminos, 1 teaspoon of smoked paprika, 1/4 teaspoon of cayenne pepper, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir everything together well.
  5. 5Bring the mixture to a gentle simmer. Once simmering, reduce the heat to low (250°F / 120°C), cover the pot, and cook for 30 minutes, or until the chicken is tender and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  6. 6While the stew is simmering, prepare the cauliflower rice. Cut the 1 large head of cauliflower into florets. Place the florets in a food processor and pulse until they resemble the texture of rice. Be careful not to over-process into a paste.
  7. 7Heat a medium skillet over medium heat (350°F / 175°C) with a drizzle of olive oil if desired (not listed, so skip if strictly adhering). Add the processed cauliflower rice and cook for 5-7 minutes, stirring occasionally, until it is tender-crisp. Alternatively, steam the cauliflower rice for 5 minutes until tender-crisp.
