Keto Erwtensoep (Split Pea Soup) with Smoked Turkey

A hearty, keto-friendly version of traditional Dutch Erwtensoep, using smoked turkey instead of pork.

Ingredients

  • 1 cup Split peas
  • 1 lb Smoked turkey
  • 2 stalks Celery
  • 1 large Carrot
  • 1 medium Onion
  • 1 medium Leek
  • 8 cups Vegetable broth
  • 1 Bay leaf
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Soak split peas in water for at least 4 hours or overnight.
  2. 2Drain and rinse the soaked split peas.
  3. 3In a large pot, combine split peas, smoked turkey, chopped celery, chopped carrot, chopped onion, sliced leek, vegetable broth, bay leaf, and thyme.
  4. 4Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the split peas are tender.
  5. 5Remove the smoked turkey from the pot and shred the meat. Return the shredded turkey to the pot.
  6. 6Season with salt and pepper. Serve hot.
