Keto 'Erwtensoep' (Pea Soup) with Smoked Ham Hock

A hearty and flavorful keto-friendly version of Dutch pea soup. Split peas are avoided, and cauliflower rice adds bulk along with traditional smoked ham hock for richness. This is a thick, stick-to-your-ribs soup.

Ingredients

  • 1 Smoked Ham Hock
  • 4 cups Cauliflower Rice
  • 2 stalks Celery
  • 1 Carrot
  • 1 Leek
  • 1 Onion
  • 8 cups Chicken Broth
  • 1 Bay Leaf
  • 1/2 teaspoon Thyme
  • 1 lb Smoked Sausage (Andouille)
  • to taste Salt and Pepper

Instructions

  1. 1Place the 1 Smoked Ham Hock in a large heavy-bottomed pot and cover it with the 8 cups of Chicken Broth. Add the 1 Bay Leaf and the 1/2 teaspoon Thyme. Bring the liquid to a boil over high heat, then reduce the heat to low, cover the pot, and simmer for 1 hour and 30 minutes, or until the meat on the ham hock is very tender and easily pulls away from the bone.
  2. 2Carefully remove the 1 Smoked Ham Hock from the pot and place it on a cutting board. Let it cool for about 10 minutes, or until it is cool enough to handle. Once cooled, shred all the tender meat from the bone, then discard the skin and bone.
  3. 3While the ham hock is cooling, prepare your vegetables: trim and thinly slice the 2 stalks Celery, peel and thinly slice the 1 Carrot, trim and thinly slice the 1 Leek, and peel and thinly slice the 1 Onion. Add all the prepared vegetables to the pot with the chicken broth. Increase the heat to medium, cover the pot, and simmer for 15 minutes, or until the vegetables are tender.
  4. 4Add the 4 cups of Cauliflower Rice and the shredded meat from the 1 Smoked Ham Hock to the pot. Stir everything together, cover the pot, and continue to simmer for another 10 minutes, or until the cauliflower rice is tender.
  5. 5Slice the 1 lb Smoked Sausage (Andouille) into bite-sized pieces. Add the sliced sausage to the pot and stir it in. Continue to simmer for 5 minutes, or until the sausage is heated through.
  6. 6Taste the soup and add Salt and Pepper as needed to reach your desired flavor.
  7. 7Serve the Keto 'Erwtensoep' hot.
