- 1 lb Celeriac, diced
- 1 lb Smoked sausage (kielbasa)
- 6 slices Bacon, diced

- 1 Leek, sliced
- 2 stalks Celery, chopped

- 8 cups Vegetable broth
- 1 Bay leaf
- 1 tsp Thyme
- 1 tsp Salt
- 1/2 tsp Pepper

- 1Rinse the 1 cup of split peas under cold water until the water runs clear. Rinse the 1 lb of celeriac, diced, under cold water.
- 2Place a large, heavy-bottomed pot or Dutch oven over medium heat (350°F / 175°C). Add the 6 slices of bacon, diced, and cook until it is crispy, about 5-8 minutes. Use a slotted spoon to remove the crispy bacon to a plate lined with paper towels, leaving the rendered bacon fat in the pot.

Cook, stirring occasionally, until the vegetables have softened, about 5-7 minutes. They should look slightly translucent.
- 4Add the rinsed 1 cup of split peas, the 1 lb of celeriac, diced into 1/2-inch cubes, the 8 cups of vegetable broth, the 1 bay leaf, and the 1 tsp of thyme to the pot. Increase the heat to high and bring the mixture to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 1 hour and 30 minutes to 2 hours.
