  • 2 medium Celeriac
  • 1 medium Avocado
  • 1/2 cup Mayonnaise
  • 1 tablespoon Lime Juice
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 2 medium celeriac and carefully cut them into fry-shaped sticks, aiming for pieces about 1/2-inch thick and 3-4 inches long.
  2. 2In a large bowl, combine the cut celeriac with the 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Toss everything together thoroughly until all the celeriac sticks are evenly coated.
  3. 3Spread the seasoned celeriac in a single layer on a large baking sheet, ensuring they are not overcrowded. Bake for 25-30 minutes, making sure to flip the celeriac sticks halfway through the baking time, until they are golden brown and tender when pierced with a fork.
  4. 4While the celeriac fries are baking, prepare the avocado mayo. In a medium bowl, mash the 1 medium avocado until it is smooth. Stir in the 1/2 cup of mayonnaise and the 1 tablespoon of lime juice until the mixture is well combined and creamy.
  5. 5Once the celeriac fries are golden brown and tender, carefully remove them from the oven. Serve the warm celeriac fries immediately with the prepared avocado mayo for dipping.
