Keto Dutch 'Boerenkoolstamppot' with Sausage (Dairy-Free)

A keto and dairy-free version of the traditional Dutch kale and potato mash, using cauliflower for a low-carb alternative and coconut aminos for flavor depth.

Ingredients

  • 1 large head Cauliflower
  • 10 oz Kale (chopped)
  • 1 lb Smoked sausage (kielbasa)
  • 1/2 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Coconut aminos
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Chop the cauliflower into florets and steam until tender, about 15-20 minutes.
  2. 2Slice the smoked sausage into rounds.
  3. 3Sauté the chopped onion and minced garlic in olive oil until softened, about 5 minutes.
  4. 4Add the chopped kale to the pan and cook until wilted, about 5-7 minutes.
  5. 5In a food processor, blend the steamed cauliflower with coconut aminos, salt, and pepper until smooth.
  6. 6In a large pan, combine the cauliflower mash with the sautéed kale and onion mixture. Heat through.
  7. 7Serve with the sliced smoked sausage.
