Ingredients

  • 1.5 lbs Chicken Thighs
  • 1/4 cup Soy Sauce (Tamari for gluten-free)
  • 2 tbsp Erythritol
  • 1 tbsp Rice Vinegar
  • 1 tsp Ginger
  • 2 cloves Garlic
  • 1/4 tsp Xanthan Gum
  • 2 stalks Green Onions
  • 1 medium Cucumbers
  • 2 tbsp Rice Vinegar
  • 1 tsp Sesame-free Toasted Seeds (e.g. sunflower seeds)
  • 1 tbsp Avocado Oil

Instructions

  1. 1Cut the 1.5 lbs of chicken thighs into 1-inch (2.5 cm) bite-sized pieces.
  2. 2In a medium bowl, combine the 1/4 cup of Tamari, 2 tbsp of erythritol, 1 tbsp of rice vinegar, 1 tsp of ginger (minced), 2 cloves of garlic (minced), and 1/4 tsp of xanthan gum. Whisk until the xanthan gum is fully dissolved and the sauce is smooth; then, pour 2 tablespoons of this yakitori sauce into a separate small bowl and set it aside for basting.
  3. 3Add the cut 1.5 lbs of chicken thighs to the remaining yakitori sauce in the medium bowl, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the chicken to absorb the flavors.
  4. 4While the chicken marinates, prepare the 2 stalks of green onions by cutting them into 1-inch (2.5 cm) pieces. Thread the marinated chicken pieces onto skewers, alternating with the 1-inch (2.5 cm) pieces of green onions, leaving a small space between each piece.
  5. 5Preheat a grill or grill pan to medium heat (approximately 350-375°F / 175-190°C). Lightly brush the grill grates with 1 tbsp of avocado oil to prevent sticking. Place the skewers on the hot grill and cook for 10-12 minutes, turning every 2-3 minutes; during the last 3-4 minutes of cooking, brush the skewers with the 2 tablespoons of reserved yakitori sauce, continuing to cook until the chicken reaches an internal temperature of 165°F (74°C) and the edges are lightly charred.
  6. 6While the skewers cook, prepare the cucumber salad: Thinly slice the 1 medium cucumber into rounds. In a separate medium bowl, combine the sliced cucumber with 2 tbsp of rice vinegar and 1 tsp of sesame-free toasted seeds, then toss gently to combine.
