Keto Chicken Sekuwa (Grilled Skewers)

A popular Nepali grilled chicken skewer dish, marinated in a blend of spices. This keto version uses keto-friendly marinades for a delicious and healthy lunch.

Ingredients

  • 1.5 lbs Chicken thighs (boneless, skinless)
  • 2 tbsp Olive oil
  • 1 tbsp Ginger-garlic paste
  • 0.5 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1 tsp Red chili powder
  • 2 tbsp Lemon juice
  • 1 tsp Salt

Instructions

  1. 1Cut the 1.5 lbs of boneless, skinless chicken thighs into bite-sized pieces, about 1-inch cubes.
  2. 2In a medium bowl, combine the 2 tbsp of olive oil, 1 tbsp of ginger-garlic paste, 0.5 tsp of turmeric powder, 1 tsp of cumin powder, 1 tsp of coriander powder, 1 tsp of red chili powder, 2 tbsp of lemon juice, and 1 tsp of salt. Mix everything together until it forms a smooth marinade.
  3. 3Add the cut chicken pieces to the bowl with the marinade. Use your hands or a spoon to coat all the chicken pieces evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  4. 4If using wooden skewers, soak them in water for at least 20 minutes before threading the chicken to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
  5. 5Preheat your grill to medium heat. For gas grills, this is typically around 350-400°F (175-200°C). For charcoal grills, arrange the coals so you can maintain this heat level.
  6. 6Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the chicken is cooked through and has developed a slightly charred exterior. The internal temperature of the chicken should reach 165°F (74°C).
  7. 7Remove the skewers from the grill and let them rest for 2-3 minutes before serving. This allows the juices to redistribute within the chicken, making it more tender.
  8. 8Serve the Keto Chicken Sekuwa hot. It pairs well with a side of cauliflower rice or a simple green salad.
