Keto Chicken Mo:Mo Dumplings

Keto-friendly version of the popular Nepalese dumplings, Mo:Mo. These are filled with a flavorful chicken mixture and steamed to perfection. A great keto lunch alternative.

Ingredients

  • 1 lb Ground chicken
  • 1 cup Almond flour
  • 2 tbsp Psyllium husk powder
  • 1 medium Onion, finely chopped
  • 2 tbsp Ginger, minced
  • 4 cloves Garlic, minced
  • 1/4 cup Cilantro, chopped
  • 2 tbsp Soy sauce (or Coconut aminos)
  • 1 tbsp Sesame oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Warm water

Instructions

  1. 1In a medium bowl, combine the 1 cup almond flour, 2 tbsp psyllium husk powder, and 1/4 tsp salt. Gradually add the 1/2 cup warm water and knead the mixture by hand for 2-3 minutes until a cohesive dough forms. Let the dough rest, uncovered, for 10 minutes to allow the psyllium husk to fully absorb the water and make the dough pliable.
  2. 2While the dough rests, prepare the filling: In a large bowl, combine the 1 lb ground chicken, 1 medium finely chopped onion, 2 tbsp minced ginger, 4 cloves minced garlic, 1/4 cup chopped cilantro, 2 tbsp soy sauce (or coconut aminos), 1 tbsp sesame oil, 3/4 tsp salt, and 1/2 tsp black pepper. Mix thoroughly with your hands or a spoon until all ingredients are evenly distributed.
  3. 3Divide the rested dough into 16 equal portions, each approximately 1 tablespoon in size. On a clean, dry surface, roll each portion into a thin circular wrapper, about 3 inches (7.5 cm) in diameter.
  4. 4Place approximately 1 tablespoon of the chicken filling mixture in the center of each dough circle. Carefully fold the edges of the dough over the filling, pinching them together firmly to seal and form a dumpling shape, ensuring there are no open seams.
  5. 5Set up a steamer basket over a pot of boiling water, ensuring the water does not touch the bottom of the steamer basket. Arrange the shaped dumplings in a single layer in the steamer basket, leaving a small space between each to prevent sticking; you may need to steam in batches.
  6. 6Cover the steamer and steam over medium-high heat (water boiling vigorously) for 20-25 minutes. The dumplings are done when the dough is firm and the internal temperature of the chicken filling reaches 165°F (74°C), and the chicken no longer appears pink. Carefully remove the cooked dumplings from the steamer and serve immediately.
