Keto Chicken Cacciatore with Zucchini Noodles

Ingredients

  • 8 each Chicken Thighs (bone-in, skin-on)
  • 4 medium Zucchini
  • 28 oz Canned Diced Tomatoes
  • 1 medium Onion (chopped)
  • 1 medium Bell Pepper (sliced)
  • 8 oz Mushrooms (sliced)
  • 3 cloves Garlic (minced)
  • 1/2 cup Dry Red Wine
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Season chicken thighs with salt and pepper.
  2. 2Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown chicken thighs on both sides (about 5-7 minutes per side). Remove chicken from pot and set aside.
  3. 3Add onion and bell pepper to the pot and cook until softened (about 5 minutes). Add mushrooms and garlic and cook until fragrant (about 2 minutes).
  4. 4Pour in red wine and cook until reduced slightly (about 3 minutes).
  5. 5Add diced tomatoes, oregano, and basil to the pot. Bring to a simmer.
  6. 6Return chicken thighs to the pot. Cover and simmer for 30-40 minutes, or until chicken is cooked through.
  7. 7While chicken is simmering, spiralize zucchini into noodles. Lightly sauté the zucchini noodles in a separate pan for a few minutes until tender but not mushy.
  8. 8Serve chicken cacciatore over zucchini noodles.
