Ingredients

  • 2 lbs Pork shoulder
  • 2 medium Jicama
  • 0.5 cup Soy sauce (or coconut aminos)
  • 0.25 cup Swerve (or erythritol)
  • 2 tsp Chinese five-spice powder
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • few drops drops Red food coloring (optional)
  • 1 tbsp Sesame oil

Instructions

  1. 1Cut the pork shoulder into long strips, about 1-inch thick.
  2. 2In a bowl, whisk together soy sauce, Swerve, Chinese five-spice powder, garlic, ginger, red food coloring (if using), and sesame oil.
  3. 3Marinate the pork strips in the sauce for at least 2 hours, or preferably overnight.
  4. 4Preheat oven to 350°F (175°C).
  5. 5Place the marinated pork on a baking sheet lined with parchment paper.
  6. 6Bake for 30-35 minutes, flipping halfway through, until the pork is cooked through and slightly caramelized.
  7. 7While the pork is baking, peel the jicama and dice it into small pieces, resembling rice.
  8. 8Serve the Char Siu Pork sliced, over the jicama 'rice'.
