Ingredients

  • 1.5 lbs White fish fillets
  • 1 can Bamboo shoots
  • 2 tbsp Coconut oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 0.5 tsp Turmeric powder
  • 2 tbsp Fish sauce
  • 1 can Coconut milk
  • 1 tbsp Lime juice
  • 2 tbsp Cilantro
  • 1 cup Water

Instructions

  1. 1Place a large pot over medium heat (350°F / 175°C) and add the 2 tablespoons of coconut oil.
  2. 2Add the 1 medium onion, cut into 1/2-inch pieces, and cook, stirring occasionally, until softened, about 5 minutes.
  3. 3Add the 4 cloves of garlic, minced, and the 1 inch of ginger, grated, and cook for 1 minute more, until fragrant.
  4. 4Stir in the 0.5 teaspoon of turmeric powder until well combined.
  5. 5Add the 1 can of bamboo shoots, drained, and cook for 2 minutes, stirring occasionally.
  6. 6Pour in the 1 cup of water, 2 tablespoons of fish sauce, and 1 can of coconut milk. Bring the mixture to a gentle simmer, which is a low boil with small bubbles.
  7. 7Carefully add the 1.5 pounds of white fish fillets to the simmering liquid. Cook for 8 to 10 minutes, or until the fish flakes easily with a fork and has an internal temperature of 145°F (63°C).
  8. 8Stir in the 1 tablespoon of lime juice and the 2 tablespoons of cilantro, chopped.
  9. 9Serve the Keto Burmese Fish Stew hot.
