Ingredients

  • 2 lbs Pork Belly
  • 1/4 cup Coconut Aminos
  • 1/4 cup Rice Wine (Shaoxing)
  • 4 slices Ginger
  • 4 cloves Garlic
  • 2 whole Star Anise
  • 1 3-inch Cinnamon Stick
  • 2 cups Chicken Broth
  • 1 tbsp Erythritol
  • 4 whole Hard-boiled eggs (optional)

Instructions

  1. 1Blanch pork belly in boiling water for 5 minutes. Rinse and cut into 1.5-inch cubes.
  2. 2In a large pot or Dutch oven, combine coconut aminos, rice wine, ginger, garlic, star anise, cinnamon stick, chicken broth, and erythritol.
  3. 3Add pork belly to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours, or until pork belly is very tender.
  4. 4If using hard-boiled eggs, add them to the pot during the last 30 minutes of cooking.
  5. 5Serve hot with the braising sauce. May be served over cauliflower rice.
  6. 6Garnish with sliced green onions.
