Keto Boli (Roasted Plantain) with Groundnut Sauce using Avocado

A keto-friendly twist on Boli, traditionally made with roasted plantains. This version uses avocado for a creamy groundnut sauce substitute.

Ingredients

  • 2 large Avocados (ripe)
  • 2 tablespoons Lime juice
  • 1/2 teaspoon Chili flakes
  • 1/4 teaspoon Salt
  • 8 slices Halloumi cheese
  • 1 tablespoon Coconut oil

Instructions

  1. 1Prepare the avocado sauce: In a blender or food processor, combine the 2 large ripe avocados, 2 tablespoons lime juice, 1/2 teaspoon chili flakes, and 1/4 teaspoon salt. Blend until the mixture is smooth and creamy.
  2. 2Heat a grill or grill pan over medium-high heat, about 400°F (200°C).
  3. 3Brush the 8 slices halloumi cheese with 1 tablespoon coconut oil.
  4. 4Place the oiled halloumi slices on the hot grill. Grill for 2 to 3 minutes per side, until the cheese is golden brown and slightly softened.
  5. 5Serve the 8 grilled halloumi slices immediately with the prepared avocado sauce.
