- 1Place a large heavy-bottomed pot or Dutch oven over medium-high heat (350°F/175°C). Add the 3 tablespoons of coconut oil and let it heat until shimmering.
- 2Add the 2 large onions, thinly sliced, to the hot oil. Cook, stirring occasionally, for 8-10 minutes, or until they are golden brown and softened.
- 3Stir in the 2 tablespoons of ginger-garlic paste and cook for 2 minutes, until fragrant.
- 4Add the 2 lb of beef shank or stew meat to the pot. Cook, stirring and turning the pieces, for 5-7 minutes, until all sides of the beef are browned.
- 5Sprinkle the 3 tablespoons of nihari masala and the 2 tablespoons of almond flour over the beef and onions. Stir constantly for 5 minutes, allowing the spices and almond flour to toast and coat the meat.
- 6Pour in the 6 cups of bone broth. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring the liquid to a boil, then immediately reduce the heat to low, cover the pot, and let it simmer gently for 2 to 3 hours, or until the beef is very tender and easily pulls apart with a fork.
