Keto Beef Kare-Kare with Peanut-Free Sauce

A rich and flavorful Filipino stew made keto-friendly using beef shanks and a peanut-free sauce made from sunflower seed butter. This is entirely dairy-free.

Ingredients

  • 2 lbs Beef Shanks
  • 1/2 cup Sunflower Seed Butter
  • 1 large Onion
  • 4 cloves Garlic
  • 1 tbsp Annatto Seeds
  • 8 cups Water
  • 1 cup Green Beans
  • 1 medium Eggplant
  • 6 cups Bok Choy
  • 2 tbsp Fish Sauce

Instructions

  1. 1Place the 1 tbsp annatto seeds in a small heatproof bowl and pour 1/2 cup of hot water over them. Let them soak for 30 minutes to release their color.
  2. 2In a large, heavy-bottomed pot, heat your stove to medium-high (400°F / 200°C). Add the 2 lbs beef shanks and sear them on all sides until they are nicely browned, about 3-4 minutes per side. Remove the beef shanks from the pot and set them aside on a plate.
  3. 3Add the 1 large onion, chopped, and the 4 cloves garlic, minced, to the same pot. Cook, stirring occasionally, until the onion is softened and translucent, about 5-7 minutes. The garlic should be fragrant.
  4. 4Pour the 8 cups of water into the pot with the onions and garlic. Add the seared 2 lbs beef shanks back into the pot. Increase the heat to high and bring the water to a rolling boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 1.5 to 2 hours, or until the beef is very tender when pierced with a fork. The internal temperature of the beef should reach at least 195°F (90.5°C).
  5. 5Carefully remove the tender 2 lbs beef shanks from the pot and place them on a clean plate. Strain the broth through a fine-mesh sieve into a separate bowl or container, discarding the solids (onion and garlic).
  6. 6Return the strained broth to the large, heavy-bottomed pot. Stir in the 1/2 cup sunflower seed butter until it is fully combined and smooth. Add the reserved annatto water (the liquid from soaking the seeds, leaving the seeds behind). Bring the sauce to a gentle simmer over medium heat (350°F / 175°C) and cook, stirring occasionally, until the sauce has thickened slightly, about 5-10 minutes. It should coat the back of a spoon.
  7. 7Add the 1 cup green beans, trimmed, and the 1 medium eggplant, cut into 1-inch pieces, to the simmering sauce. Cook for 5-8 minutes, or until the vegetables are tender-crisp. They should still have a slight bite.
  8. 8Return the cooked 2 lbs beef shanks to the pot. Add the 6 cups bok choy, roughly chopped, to the pot. Stir everything together and cook for another 2-3 minutes, just until the bok choy has wilted.
  9. 9Stir in the 2 tbsp fish sauce. Taste the sauce and add more fish sauce if desired. Serve the Keto Beef Kare-Kare hot.
