Keto Beef Kare-Kare with Peanut-Free Sauce

Ingredients

  • 2 lbs Beef Chuck
  • 8 cups Water
  • 1 large Onion
  • 4 cloves Garlic
  • 2 tbsp Annatto Seeds
  • 1/2 cup Sunflower Seed Butter
  • 2 tbsp Coconut Flour
  • 1 head Bok Choy
  • 1 cup Green Beans
  • 1 medium Eggplant
  • 2 tbsp Fish Sauce

Instructions

  1. 1In a large pot or Dutch oven, combine beef chuck, water, onion, and garlic. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until beef is very tender.
  2. 2In a separate pan, heat annatto seeds in 1/4 cup of water to extract color. Strain and discard seeds. Set aside the annatto water.
  3. 3In a bowl, whisk together sunflower seed butter and coconut flour. Gradually add some of the beef broth to create a smooth paste.
  4. 4Add the sunflower seed butter mixture and annatto water to the pot with the beef. Stir well to combine.
  5. 5Add bok choy, green beans, and eggplant. Cook for 10-15 minutes, or until vegetables are tender.
  6. 6Season with fish sauce to taste. Serve hot.
