Keto Bavarian Cream with Berries

Ingredients

  • 2 cups Heavy Cream
  • 1/4 cup Erythritol
  • 1 tbsp Gelatin
  • 1/4 cup Water
  • 1 tsp Vanilla Extract
  • 1 cup Fresh Berries

Instructions

  1. 1In a small bowl, combine the 1 tbsp Gelatin with the 1/4 cup Water. Let this sit for 5 minutes until it thickens, which is called blooming.
  2. 2In a medium saucepan, combine the 2 cups Heavy Cream and the 1/4 cup Erythritol. Heat this mixture over medium heat, stirring constantly until the 1/4 cup Erythritol has completely dissolved and the 2 cups Heavy Cream is warm to the touch, but not boiling. This should take about 3-5 minutes. You will know it's ready when you no longer feel any grittiness from the erythritol.
  3. 3Remove the saucepan from the heat. Add the bloomed gelatin mixture to the warm cream mixture and stir continuously until the gelatin is completely dissolved. This should take about 1-2 minutes.
  4. 4Stir in the 1 tsp Vanilla Extract until it is fully incorporated into the cream mixture.
  5. 5Carefully pour the cream mixture into four individual ramekins or one serving dish.
  6. 6Place the ramekins or serving dish in the refrigerator. Allow the mixture to chill for at least 4 hours, or until it is firm and set. This chilling time is essential for the cream to achieve its proper texture.
  7. 7Once the cream is set, carefully arrange the 1 cup Fresh Berries on top of each serving just before you are ready to serve.
