Keto Baked Feta with Vegetables

Ingredients

  • 8 oz Feta cheese
  • 3 tbsp Olive oil
  • 1 cup Cherry tomatoes
  • 1 medium Bell pepper (any color)
  • 0.5 medium Red onion
  • 0.5 cup Kalamata olives
  • 1 tsp Dried oregano
  • 0.25 tsp Red pepper flakes
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Cut the 1 medium bell pepper into 1/2-inch pieces and thinly slice the 0.5 medium red onion. In a large bowl, combine the 1 cup of cherry tomatoes, the cut 1 medium bell pepper, the sliced 0.5 medium red onion, and the 0.5 cup of Kalamata olives.
  3. 3Add the 3 tablespoons of olive oil, 1 teaspoon of dried oregano, 0.25 teaspoon of red pepper flakes, 0.25 teaspoon of salt, and 0.25 teaspoon of black pepper to the vegetables in the bowl. Toss gently until all the vegetables are evenly coated.
  4. 4Place the 8 oz Feta cheese in the center of a medium baking dish. Pour the seasoned vegetable mixture from the bowl around and over the 8 oz Feta cheese.
  5. 5Carefully place the baking dish into the preheated 400°F (200°C) oven. Bake for 20 to 25 minutes, or until the 8 oz Feta cheese is visibly softened and the vegetables are tender when pierced with a fork.
  6. 6Remove the baking dish from the oven. Serve the dish hot, optionally with a side of zucchini noodles.
