Keto Bak Kut Teh (Pork Ribs Soup)

Ingredients

  • 2 lbs Pork Ribs
  • 2 Garlic (whole heads)
  • 3 Star Anise
  • 1 Cinnamon Stick
  • 6 Cloves
  • 1 tbsp White Peppercorns
  • 3 tbsp Soy Sauce (low sodium)
  • 8 cups Chicken Broth (low sodium)
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1Place the 2 lbs Pork Ribs in a large pot and cover with water. Bring the water to a rolling boil over high heat. Boil for 5 minutes. Drain the pork ribs and rinse them under cool running water.
  2. 2In the same large pot, combine the blanched 2 lbs Pork Ribs, 2 whole heads of Garlic (unpeeled), 3 Star Anise, 1 Cinnamon Stick, 6 Cloves, and 1 tbsp White Peppercorns. Add the 3 tbsp Soy Sauce (low sodium), 8 cups Chicken Broth (low sodium), 1 tsp Salt, and 0.5 tsp Pepper.
  3. 3Bring the contents of the pot to a rolling boil over high heat. Once boiling, immediately reduce the heat to low. Cover the pot and let it simmer gently for at least 2 hours, or until the 2 lbs Pork Ribs are fork-tender. The broth should be fragrant and the ribs should be very soft.
  4. 4Carefully ladle the hot soup and pork ribs into individual serving bowls. Serve immediately.
