Keto Ayam Masak Merah (Red Cooked Chicken)

Ingredients

  • 1.5 lbs Chicken pieces (thighs or drumsticks)
  • 6 oz Tomato paste
  • 2 tbsp Chili paste (sambal oelek)
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Soy sauce (keto-friendly)
  • 1 tsp Erythritol
  • 2 tbsp Coconut oil
  • 1/2 cup Water

Instructions

  1. 1Heat the 2 tablespoons of coconut oil in a large 12-inch skillet or a large heavy-bottomed pot over medium heat, which is about 350°F (175°C).
  2. 2Add the chopped 1 medium onion, minced 3 cloves garlic, and grated 1 inch ginger to the skillet. Sauté for 3-5 minutes, stirring occasionally, until the ingredients are softened and smell fragrant.
  3. 3Add the 1.5 lbs of chicken pieces to the skillet. Cook for 5-7 minutes, turning the pieces occasionally, until they are browned on all sides.
  4. 4Stir in the 6 oz of tomato paste, 2 tablespoons of chili paste, 2 tablespoons of keto-friendly soy sauce, 1 teaspoon of erythritol, and 1/2 cup of water. Mix everything together until the chicken pieces are well coated with the sauce.
  5. 5Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the skillet or pot and let it cook for 30-40 minutes. The chicken is cooked through when it reaches an internal temperature of 165°F (74°C) and the sauce has thickened to your liking.
  6. 6Serve the Keto Ayam Masak Merah hot.
