Keto Asparagus and Ham Rolls (Asperges met Ham)

Ingredients

  • 1 lb Asparagus Spears
  • 8 slices Sliced Ham
  • 1 lb Cauliflower Florets
  • 1/4 cup Butter
  • 2 Egg Yolks
  • 2 tbsp Lemon Juice
  • 1/4 cup Heavy Cream
  • 1/4 tsp Salt
  • 1/8 tsp White Pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Trim the tough ends from the 1 lb Asparagus Spears. Bring a large pot of water to a rolling boil over high heat. Carefully add the trimmed 1 lb Asparagus Spears to the boiling water and cook for exactly 2 minutes, until bright green and slightly tender-crisp. Immediately transfer the asparagus to a large bowl filled with ice water to stop the cooking process. Once cooled, drain the asparagus very well and pat dry with paper towels.
  3. 3Lay out the 8 slices of Sliced Ham. Wrap one slice of ham around each blanched asparagus spear, forming 8 rolls. Arrange these 8 ham-wrapped asparagus rolls in a single layer on a baking sheet.
  4. 4Carefully place the baking sheet with the ham-wrapped asparagus rolls into the preheated oven at 375°F (190°C). Bake for 10 to 15 minutes, or until the ham is lightly browned and slightly crispy at the edges.
  5. 5While the asparagus rolls are baking, place the 1 lb Cauliflower Florets into a steamer basket set over a large pot with about 1 inch of simmering water. Cover the pot and steam the cauliflower over medium-high heat for 10 to 15 minutes, until the florets are very tender and can be easily pierced with a fork.
  6. 6Carefully transfer the steamed 1 lb Cauliflower Florets to a blender or food processor. Add the 1/4 cup Butter, 2 Egg Yolks, 2 tbsp Lemon Juice, and 1/4 cup Heavy Cream. Blend on high speed for 1 to 2 minutes, until the mixture is completely smooth and creamy with no lumps.
  7. 7Add the 1/4 tsp Salt and 1/8 tsp White Pepper to the blended sauce in the blender or food processor. Blend again briefly for 10-15 seconds to fully combine the seasonings.
  8. 8Carefully arrange the baked ham-wrapped asparagus rolls on individual serving plates. Spoon the warm, creamy cauliflower hollandaise sauce generously over the top of the rolls. Serve immediately.
