Keto Arroz de Marisco (Portuguese Seafood Rice)

Ingredients

  • 4 cups Cauliflower rice
  • 0.5 lb Shrimp
  • 1 lb Clams
  • 1 lb Mussels
  • 0.5 lb Squid
  • 3 tbsp Olive oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 14.5 oz can Diced Tomatoes
  • 1 cup Fish broth
  • 1/2 cup White wine
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened (about 5 minutes). Add minced garlic and cook for another minute.
  2. 2Add diced tomatoes, fish broth, and white wine to the pot. Bring to a simmer.
  3. 3Add shrimp, clams, mussels, and squid to the pot. Cover and cook until clams and mussels open (about 5-7 minutes). Discard any clams or mussels that do not open.
  4. 4Stir in cauliflower rice and paprika. Cook for another 5-7 minutes, until cauliflower rice is tender.
  5. 5Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
