A refreshing Nepalese-inspired salad with cauliflower as a low-carb substitute for potatoes, combined with bamboo shoots, black-eyed peas and a tangy vinaigrette.

Ingredients

  • 1 medium Cauliflower
  • 1 cup Bamboo shoots
  • 1 cup Black-eyed peas
  • 1/4 medium Red onion
  • 2 tbsp Cilantro
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • 1/2 small Green chilies
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Place the 1 medium cauliflower into a large pot with enough water to cover. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the cauliflower is tender when pierced with a fork but not falling apart. Drain the cauliflower and let it cool completely. Once cool, cut the cauliflower into bite-sized pieces.
  2. 2In a large bowl, combine the cooled, bite-sized cauliflower pieces, 1 cup bamboo shoots, and 1 cup black-eyed peas.
  3. 3Add the 1/4 medium red onion, finely chopped, and 2 tablespoons cilantro to the bowl with the cauliflower mixture.
  4. 4In a separate small bowl, whisk together 2 tablespoons lime juice, 2 tablespoons olive oil, 1/2 small green chilies (minced), 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  5. 5Pour the dressing over the salad ingredients in the large bowl. Toss gently to ensure everything is evenly coated.
  6. 6Serve the salad chilled or at room temperature.
