Keto Aloo Tama (Potato and Bamboo Shoot Curry)

Ingredients

  • 1 medium head Cauliflower florets
  • 1 cup Fermented bamboo shoots (Tama)
  • 2 tbsp Ghee
  • 1 Onion, chopped
  • 2 tbsp Ginger-garlic paste
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Red chili powder
  • 2 tbsp Tomato paste
  • 2 cups Water
  • 1 tsp Salt
  • 2 tbsp Fresh cilantro, chopped

Instructions

  1. 1Rinse the 1 cup Fermented bamboo shoots (Tama) thoroughly under cold running water. Place the rinsed bamboo shoots in a small saucepan, cover with water, and bring to a boil over medium-high heat (212°F / 100°C). Boil for 10 minutes, then drain completely and set aside.
  2. 2Prepare the 1 medium head Cauliflower florets by chopping them into roughly 1-inch pieces.
  3. 3Place a large, heavy-bottomed pot or Dutch oven over medium heat (350°F / 175°C). Add the 2 tablespoons of Ghee and allow it to melt and shimmer.
  4. 4Add the 1 Onion, chopped, to the hot ghee. Sauté, stirring occasionally, for 8-10 minutes, or until the onion is softened and golden brown.
  5. 5Add the 2 tablespoons of Ginger-garlic paste to the pot. Sauté for 1 minute, stirring constantly, until fragrant.
  6. 6Stir in the 1 teaspoon Turmeric powder, 1 teaspoon Cumin powder, 1 teaspoon Coriander powder, and 1/2 teaspoon Red chili powder. Cook for 30 seconds, stirring constantly, until the spices are fragrant.
  7. 7Add the 2 tablespoons of Tomato paste to the pot. Cook, stirring constantly, for 2 minutes.
  8. 8Add the prepared 1 medium head Cauliflower florets and the drained 1 cup Fermented bamboo shoots (Tama) to the pot. Stir well to coat everything evenly with the spice mixture.
  9. 9Pour in the 2 cups of Water and add the 1 teaspoon Salt. Stir to combine, then bring the mixture to a boil over medium-high heat (212°F / 100°C).
  10. 10Once boiling, reduce the heat to low (250°F / 120°C), cover the pot tightly, and let it simmer for 20-25 minutes. The curry is ready when the cauliflower florets are tender when pierced with a fork.
  11. 11Remove the pot from the heat. Stir in the 2 tablespoons of Fresh cilantro, chopped. Serve the Keto Aloo Tama hot.
