Keto Aloo Tama Bodi (Potato, Bamboo Shoot & Black-Eyed Peas Curry)

Ingredients

  • 1 lb Potatoes
  • 1 cup Fermented bamboo shoots (Tama)
  • 0.5 cup Black-eyed peas
  • 2 tbsp Ghee (or coconut oil)
  • 1 medium Onion
  • 1 can (14oz) Tomatoes
  • 1 tbsp Ginger-garlic paste
  • 0.5 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Salt
  • 2 cups Water

Instructions

  1. 1Soak black-eyed peas in water for at least 4 hours or overnight. Drain and rinse.
  2. 2Heat ghee (or coconut oil) in a pot over medium heat. Add chopped onion and sauté until golden brown.
  3. 3Add ginger-garlic paste and sauté for another minute.
  4. 4Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes soften.
  5. 5Add potatoes, fermented bamboo shoots, and black-eyed peas. Stir well.
  6. 6Pour in water and bring to a boil. Reduce heat and simmer for 30-40 minutes, or until potatoes are tender and the curry has thickened.
  7. 7Serve hot with a side of cauliflower rice or a vegetable.
