Keropok Lekor (Fish Crackers)

Ingredients

  • 1 lb Fish paste
  • 1/2 cup Tapioca starch
  • 1/4 cup All-purpose flour
  • 1 tsp Salt
  • 1/2 tsp Sugar
  • 1/4 cup Water
  • 2 cups Vegetable oil

Instructions

  1. 1In a bowl, combine the fish paste, tapioca starch, flour, salt, sugar, and water.
  2. 2Mix well until a smooth dough forms.
  3. 3Shape the dough into long, cylindrical logs.
  4. 4Bring a pot of water to a boil and cook the logs for 10-15 minutes, or until they float to the surface.
  5. 5Remove the logs and let them cool completely.
  6. 6Slice the logs into bite-sized pieces.
  7. 7Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  8. 8Fry the slices for 2-3 minutes, or until golden brown and crispy.
  9. 9Remove the crackers and drain on paper towels. Serve with sweet chili sauce.
