Ingredients

  • 4 Tilapia fillets
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Curry powder
  • 1 can Coconut milk
  • 2 tablespoons Lime juice
  • 2 medium Sweet potatoes
  • 1 teaspoon Paprika

Instructions

  1. 1Preheat oven to 400°F (200°C). Cut sweet potatoes into fries, toss with 1 tablespoon olive oil, paprika, salt, and pepper. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway through, until crispy.
  2. 2Season tilapia fillets with salt and pepper.
  3. 3In a large skillet, heat 2 tablespoons olive oil over medium heat. Pan-fry tilapia for 3-4 minutes per side, or until cooked through. Remove from skillet and set aside.
  4. 4In the same skillet, add onion and cook until softened. Add garlic and ginger and cook for 1 minute more.
  5. 5Stir in curry powder and cook for 1 minute more. Add coconut milk and lime juice. Bring to a simmer and cook for 5 minutes, or until sauce has thickened slightly.
  6. 6Serve tilapia with coconut curry sauce and sweet potato fries.
