Ingredients

  • 1 cup Sweet potato, cooked and mashed
  • 1 cup Coconut milk
  • 1.5 cups All-purpose flour
  • 2 tsp Baking powder
  • 2 tbsp Brown sugar
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 0.25 tsp Salt
  • 2 tbsp Coconut oil, melted

Instructions

  1. 1In a large bowl, combine mashed sweet potato, coconut milk, and melted coconut oil.
  2. 2In a separate bowl, whisk together flour, baking powder, brown sugar, cinnamon, nutmeg, and salt.
  3. 3Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  4. 4Heat a lightly oiled griddle or frying pan over medium heat.
  5. 5Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. 6Cook for 2-3 minutes per side, or until golden brown and cooked through.
