Ingredients

  • 2 tablespoons Vegetable Oil
  • 1 large Onion
  • 2 medium Tomatoes
  • 1 pound Collard Greens
  • 1/2 cup Vegetable Broth
  • 2 cups Maize Flour
  • 4 cups Water
  • 1 teaspoon Salt

Instructions

  1. 1Wash and chop the collard greens into small pieces.
  2. 2Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. 3Add the chopped tomatoes and cook until they soften, about 5 minutes.
  4. 4Add the collard greens and vegetable broth. Bring to a simmer, then reduce heat to low, cover, and simmer for 15 minutes, or until the collard greens are tender.
  5. 5Season with salt to taste.
  6. 6While the sukuma wiki is cooking, prepare the ugali. Bring the water to a boil in a saucepan. Gradually add the maize flour, stirring constantly with a wooden spoon to avoid lumps.
  7. 7Continue to stir vigorously until the ugali becomes a thick, smooth porridge.
  8. 8Serve the sukuma wiki with the ugali.
