Ingredients

  • 1 lb Collard greens
  • 2 medium Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Vegetable oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Cornmeal
  • 3 cups Water

Instructions

  1. 1Wash and finely chop the collard greens.
  2. 2Dice tomatoes and onion, mince garlic.
  3. 3Heat vegetable oil in a large pot over medium heat.
  4. 4Add onion and garlic and sauté until softened.
  5. 5Add diced tomatoes and cook for 5 minutes.
  6. 6Add chopped collard greens and cook until wilted and tender, about 15-20 minutes.
  7. 7Season with salt and pepper to taste.
  8. 8While sukuma wiki is cooking, prepare ugali. Bring water to a boil in a saucepan.
  9. 9Gradually whisk in cornmeal, stirring constantly to avoid lumps.
  10. 10Continue stirring until the mixture thickens and forms a stiff dough.
  11. 11Serve sukuma wiki with ugali.
