Kenyan Sukuma Wiki with Coconut Rice

Ingredients

  • 1 lb Collard greens
  • 2 medium Tomatoes
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 can Coconut milk
  • 1/2 cup Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Basmati rice
  • 2 tbsp Coconut flakes

Instructions

  1. 1Wash and chop the collard greens into thin strips.
  2. 2Dice the tomatoes and onion, and mince the garlic.
  3. 3Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  4. 4Add garlic, cumin, and coriander and cook for another minute until fragrant.
  5. 5Add diced tomatoes, collard greens, coconut milk, and vegetable broth. Bring to a simmer.
  6. 6Season with salt and pepper. Cover and cook for 25-30 minutes, or until the collard greens are tender.
  7. 7While the sukuma wiki is cooking, prepare the coconut rice. Rinse the rice until the water runs clear.
  8. 8In a saucepan, combine the rice with 2 cups of water and coconut flakes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed.
  9. 9Serve the sukuma wiki over the coconut rice.
