Kenyan Sukuma Wiki with Beef (Peanut-Free)

Ingredients

  • 1 pound Beef stew meat
  • 1 bunch Collard greens
  • 1 medium Onion
  • 2 medium Tomato
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1 cube Beef bouillon
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Wash and chop the collard greens. Set aside.
  2. 2Heat vegetable oil in a large pot over medium heat. Add beef stew meat and brown on all sides.
  3. 3Add onion and garlic to the pot and cook until softened, about 5 minutes.
  4. 4Add chopped tomatoes and cook for 3 minutes.
  5. 5Add chopped collard greens and stir well.
  6. 6Crumble beef bouillon over the mixture.
  7. 7Add 1/2 cup of water, cover, and simmer for 20-25 minutes, or until the beef is tender and the collard greens are cooked.
  8. 8Season with salt and pepper to taste.
  9. 9Serve hot with ugali or rice.
