Kenyan Sukuma Wiki (Collard Greens)

Ingredients

  • 1 lb Collard greens
  • 1 medium Onion
  • 2 medium Tomato
  • 2 cloves Garlic
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Chicken broth

Instructions

  1. 1Wash and chop the collard greens into small pieces.
  2. 2Chop the onion and tomatoes. Mince the garlic.
  3. 3Heat vegetable oil in a large pan over medium heat.
  4. 4Add the onion and sauté until softened.
  5. 5Add the garlic and cook for 1 minute.
  6. 6Add the tomatoes and cook until softened.
  7. 7Add the collard greens and chicken broth. Season with salt and pepper.
  8. 8Cover and cook for 15-20 minutes, or until the collard greens are tender.
