Kenyan Sukuma Wiki (Collard Greens)

Ingredients

  • 1 lb Collard greens
  • 1 medium Onion
  • 2 medium Tomato
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Wash and chop the collard greens into thin strips.
  2. 2Heat vegetable oil in a large pot or pan over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and diced tomatoes and cook for another 5 minutes, until tomatoes soften.
  4. 4Add the collard greens and stir well to combine.
  5. 5Cover the pot and let it simmer for 15-20 minutes, or until the collard greens are tender.
  6. 6Season with salt and pepper to taste. Serve hot.
