Ingredients

  • 1 can Chickpeas
  • 2 medium Bell peppers
  • 1 medium Red onion
  • 1 medium Zucchini
  • 1 medium Mango
  • 0.25 medium Red onion
  • 0.25 cup Cilantro
  • 2 tbsp Lime juice
  • 3 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1Prepare the marinade: In a bowl, mix olive oil, cumin, coriander, turmeric, salt, and pepper.
  2. 2Prepare the vegetables: Drain and rinse the chickpeas. Cut bell peppers, red onion, and zucchini into bite-sized pieces.
  3. 3Marinate the chickpeas and vegetables: Add chickpeas, bell peppers, red onion, and zucchini to the marinade and toss to coat.
  4. 4Make mango salsa: Dice the mango and finely chop the red onion and cilantro. Mix with lime juice.
  5. 5Assemble the skewers: Thread the marinated chickpeas and vegetables onto skewers.
  6. 6Grill or bake: Grill the skewers over medium heat for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred. Or bake in preheated 375F oven.
