Kenyan Spiced Beef Skewers with Cassava Fries

Ingredients

  • 1.5 lb Beef Cubes
  • 2 large Cassava
  • 4 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 0.5 tsp Chili Powder
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1In a medium bowl, combine the 4 tablespoons of olive oil, 2 tablespoons of lemon juice, 3 cloves of minced garlic, 1 teaspoon of grated ginger, 1 teaspoon of cumin, 1 teaspoon of coriander, 0.5 teaspoon of turmeric, 0.5 teaspoon of chili powder, 1 teaspoon of salt, and 0.5 teaspoon of pepper. Add the 1.5 lb of beef cubes to the bowl and toss to coat them evenly. Cover the bowl and let the beef marinate in the refrigerator for at least 30 minutes.
  2. 2While the beef is marinating, prepare the cassava. Peel the 2 large cassava and cut them into 1/2-inch thick fry shapes. Place the cut cassava into a large heavy-bottomed pot and cover with water. Add a pinch of salt to the water and bring to a boil over high heat. Cook the cassava for 10 minutes, then carefully drain all the water from the pot.
  3. 3Thread the marinated beef cubes onto skewers. If using wooden skewers, soak them in water for at least 15 minutes before threading the beef to prevent burning.
  4. 4Preheat your grill to medium-high heat, around 400-450°F (200-230°C).
  5. 5Place the beef skewers on the preheated grill. Grill for 8-10 minutes, turning them occasionally, until the beef is cooked through and has a nice char. The internal temperature of the beef should reach 160°F (71°C).
  6. 6While the beef is grilling, heat the remaining olive oil (if any was used for marinating, otherwise use a fresh tablespoon) in a large skillet over medium-high heat, around 400°F (200°C). Add the boiled and drained cassava fries to the hot oil. Fry the cassava fries for 8-10 minutes, turning them frequently, until they are golden brown and crispy on all sides.
  7. 7Remove the beef skewers from the grill and let them rest for 2-3 minutes. Remove the cassava fries from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
  8. 8Serve the Kenyan spiced beef skewers immediately with the crispy cassava fries.
