Kenyan Plantain Fritters (Matoke Bhajia)

Ingredients

  • 2 large Green Plantains, peeled and sliced
  • 1 cup Chickpea Flour (Besan)
  • 1/4 cup Rice Flour
  • 1 tsp Ginger-Garlic Paste
  • 1/2 tsp Chili Powder
  • 1/4 tsp Turmeric Powder
  • 2 tbsp Cilantro, chopped
  • 1/2 tsp Salt
  • 1/2 cup Water
  • 1 quart Vegetable Oil

Instructions

  1. 1In a large bowl, combine the 1 cup of chickpea flour, 1/4 cup of rice flour, 1 tsp of ginger-garlic paste, 1/2 tsp of chili powder, 1/4 tsp of turmeric powder, 2 tbsp of chopped cilantro, and 1/2 tsp of salt.
  2. 2Gradually add 1/2 cup of water to the dry ingredients, mixing until you have a smooth batter with no lumps.
  3. 3Heat 1 quart of vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350°F (175°C).
  4. 4Dip each of the green plantain slices into the batter, making sure they are fully coated on all sides.
  5. 5Carefully place the battered plantain slices into the hot oil, being careful not to overcrowd the pot. Fry for 3-5 minutes, or until the fritters are golden brown and crispy on all sides.
  6. 6Using a slotted spoon, remove the fried plantain fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.
  7. 7Serve the Kenyan plantain fritters hot.
