Kenyan Plantain Chips (Matoke Crisps)

Ingredients

  • 3 large Green Plantains (Matoke)
  • 2 cups Vegetable Oil
  • 1/2 teaspoon Salt

Instructions

  1. 1Peel the green plantains and thinly slice them using a mandoline or sharp knife.
  2. 2Heat vegetable oil in a deep frying pan or pot over medium-high heat.
  3. 3Carefully add the plantain slices to the hot oil in batches, making sure not to overcrowd the pan.
  4. 4Fry for 2-3 minutes on each side, until golden brown and crispy.
  5. 5Remove the chips with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  6. 6Sprinkle with salt and serve immediately.
