Kenyan Mandazi (Coconut Donuts)

Ingredients

  • 3 cups All-Purpose Flour
  • 1 cup Coconut Milk
  • 1/2 cup Sugar
  • 1 tsp Active Dry Yeast
  • 1/2 tsp Cardamom Powder
  • 1/4 tsp Salt
  • 3 cups Vegetable Oil (for frying)

Instructions

  1. 1In a large bowl, combine flour, sugar, yeast, cardamom powder, and salt.
  2. 2Gradually add coconut milk and mix until a soft dough forms.
  3. 3Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. 4Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. 5Punch down the dough and roll it out to about 1/2 inch thickness.
  6. 6Cut the dough into triangles or squares.
  7. 7Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  8. 8Fry the mandazi in batches until golden brown on all sides, about 2-3 minutes per side.
  9. 9Remove the mandazi from the oil and drain on paper towels.
  10. 10Serve warm.
