Kenyan Mahindi Choma (Grilled Corn) with Chili-Lime

Ingredients

  • 4 ears Corn on the Cob
  • 2 tbsp Olive Oil
  • 2 tbsp Lime Juice
  • 1 tsp Chili Powder
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1Preheat your grill to medium-high heat, which is about 400°F (200°C).
  2. 2In a small bowl, combine the 2 tablespoons of olive oil, 2 tablespoons of lime juice, 1 teaspoon of chili powder, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk these ingredients together until they are well mixed.
  3. 3Using a brush, coat all sides of the 4 ears of corn on the cob with the olive oil and spice mixture.
  4. 4Place the coated corn on the preheated grill. Grill for 10 to 15 minutes, turning the corn every few minutes. You will know the corn is done when the kernels are tender and have some lightly charred spots.
