Kenyan Mahamri (Spiced Coconut Doughnuts)

Ingredients

  • 3 cups All-purpose flour
  • 1 cup Coconut milk
  • 1/2 cup Sugar
  • 2 1/4 teaspoons Active dry yeast
  • 1 teaspoon Cardamom powder
  • 3 cups Vegetable oil (for frying)
  • 1/2 teaspoon Salt

Instructions

  1. 1In a large bowl, combine warm coconut milk, sugar, yeast, cardamom, and salt. Let stand for 5 minutes until foamy.
  2. 2Gradually add the flour, mixing until a soft dough forms.
  3. 3Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. 4Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. 5Punch down the dough and roll it out to about 1/2-inch thickness. Cut into triangles or desired shapes.
  6. 6Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
  7. 7Fry the mahamri in batches until golden brown on both sides, about 2-3 minutes per side.
  8. 8Remove the mahamri with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. 9Serve warm and enjoy!
