Kenyan Mahamri (Gluten-Free)

Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 1/2 cup Coconut Milk
  • 1/4 cup Sugar
  • 1 teaspoon Cardamom Powder
  • 1 teaspoon Dry Yeast
  • 1/4 teaspoon Salt
  • 2 cups Avocado Oil

Instructions

  1. 1In a large bowl, combine the 2 cups of Gluten-Free All-Purpose Flour, 1/4 cup of Sugar, 1 teaspoon of Cardamom Powder, 1 teaspoon of Dry Yeast, and 1/4 teaspoon of Salt. Whisk them together until they are evenly distributed.
  2. 2Gradually add the 1/2 cup of Coconut Milk to the dry ingredients while mixing. Continue to mix until a soft, cohesive dough forms. If the dough feels too dry, add a tiny bit more coconut milk, a teaspoon at a time. If it feels too sticky, add a tiny bit more gluten-free flour, a teaspoon at a time.
  3. 3Cover the bowl with a clean kitchen towel or plastic wrap. Let the dough rest in a warm place for 1 to 2 hours, or until it has visibly doubled in size. This resting period allows the yeast to activate and create air pockets, making the mahamri fluffy.
  4. 4Lightly dust a clean, flat surface with a small amount of gluten-free flour. Gently place the risen dough onto the floured surface. Roll the dough out to about 1/2-inch thickness. Use a knife or a pizza cutter to cut the dough into desired shapes, such as triangles or squares.
  5. 5Pour the 2 cups of Avocado Oil into a deep, heavy-bottomed pan or pot. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a tiny piece of dough into it; it should sizzle immediately.
  6. 6Carefully place a few pieces of the cut dough into the hot avocado oil, making sure not to overcrowd the pan. Fry the mahamri for 2-3 minutes per side, or until they are a deep golden brown and puffed up. They should sound like they are gently crackling in the oil.
  7. 7Using a slotted spoon or spider strainer, remove the fried mahamri from the hot oil. Place them on a plate lined with paper towels to absorb any excess oil. Repeat this process with the remaining dough pieces.
  8. 8Serve the Kenyan Mahamri warm. They are delicious on their own or with a cup of tea or coffee.
