Ingredients

  • 1 cup Brown lentils
  • 2 medium Sweet potatoes
  • 2 medium Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Coconut oil
  • 4 cups Vegetable broth
  • 2 cups Spinach
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1Prepare the lentils: Rinse the lentils thoroughly.
  2. 2Sauté vegetables: Heat coconut oil in a large pot. Add chopped onion and garlic and sauté until fragrant.
  3. 3Add tomatoes and spices: Add chopped tomatoes, cumin, coriander, and turmeric. Cook for a few minutes.
